The costs of unhealthy food and farm systems continue to mount. They include the exorbitant costs of treating dual epidemics in obesity and diabetes, but also the worsening toll from resistant “superbugs” on food, and the extreme weather events linked to the carbon-wasting practices that predominate in our conventional form of farming. Fortunately, we know to grow food in healthier, more sustainable ways. But it’s a constant, albeit imperative fight to get policies in place that will make those practices the mainstream.
